Young customer's big order inspires secret menu item at Huntsville deli

HUNTSVILLE, Ala. (WHNT) — Dallas Mill Deli has been a hometown staple for nearly 20 years. Owner, Lindsey Jennings, prides herself on getting to know her many regular customers. Only one, however, has a sandwich named after her.

"It's called the Guin-o-vator," 7-year-old Guinevere Simōn said.

Take two grilled cheeses, one with provolone and the other using American, and cook those up. Then add a hamburger patty to the middle, stack it and dress it.

"[Guinevere likes] All the way, no onions," Jennings said. This means the sandwich has mayo, mustard, ketchup, lettuce and tomato.

The sandwich, at the time nameless, is the brainchild of Guinevere's mom, Sabrina Simōn. Sabrina was a regular at the deli even before Guin was born.

"she really likes grilled cheeses and she really likes cheeseburgers, so I would get them for her after school or for lunches or for a little snack, so I said, 'let's do both of them together," Sabrina said.

She surprised Guin with the sandwich and the child was hooked.

"This is our the biggest sandwich yet," Jennings said.

With Sabrina usually picking it up for Guinevere while she was at school, Jennings had no idea who was actually eating it.

"They thought I was the one eating it – or a teenage girl was eating it. So when she walked in, they said, wait she's the one that's eating it?" Sabrina said.

Jennings was so shocked to meet tiny Guin, that she posted her and her sandwich on Facebook. It got its name, The Guin-o-Vator, and is now officially a secret menu item for anyone to order.

Guin warns, however, that it is not for the faint of heart.

"If you order it, you might want to have a big mouth," she said.

This is a characteristic still eluding the culinary cultivator, but it doesn't seem to be too big of a problem for the little foodie.

"Delicious," Guin said as she took her first big bite of today's Guin-o-Vator order.
